Strawberry Matcha Parfait
This dessert isn't too sweet but hits the spot for a sweet treat featuring fresh strawberries and a match whipped cream.
Baking sheet with high edge
Hand or stand mixer
Piping bag (tip is helpful but not required)
Circle cutter about the same size as your parfait cups
- 16 oz Whipped Cream
- 4 tbsp Matcha
- 12-16 Strawberries
- 1 box Vanilla Cake Mix (plus ingredients to make mix)
Prepare your boxed cake mix per instructions then bake on a baking sheet. Let cool.
Mix your matcha into your whipped cream until fully combined. (You can do a taste test here to see if you want to add more matcha)
Wash and slice about half of the strawberries. Cut the tops of the remaining half for the tops of the parfait.
Add your whipped cream to a piping bag. Snip the tip. You want the hole to be a decent size but not massive.
Using a cookie cutter or other round cutter, cut out circles from your cake.
Layer your strawberries around the edge of the parfait cup, then a piece of cake, then a bit of matcha cream. Complete until the cup is full then top with your whole strawberries.
