Strawberry Matcha Parfait

This dessert isn't too sweet but hits the spot for a sweet treat featuring fresh strawberries and a match whipped cream.

Equipment

  • Baking sheet with high edge
  • Hand or stand mixer
  • Piping bag (tip is helpful but not required)
  • Circle cutter about the same size as your parfait cups

Ingredients
  

  • 16 oz Whipped Cream
  • 4 tbsp Matcha
  • 12-16 Strawberries
  • 1 box Vanilla Cake Mix (plus ingredients to make mix)

Instructions
 

  • Prepare your boxed cake mix per instructions then bake on a baking sheet. Let cool.
  • Mix your matcha into your whipped cream until fully combined. (You can do a taste test here to see if you want to add more matcha)
  • Wash and slice about half of the strawberries. Cut the tops of the remaining half for the tops of the parfait.
  • Add your whipped cream to a piping bag. Snip the tip. You want the hole to be a decent size but not massive.
  • Using a cookie cutter or other round cutter, cut out circles from your cake.
  • Layer your strawberries around the edge of the parfait cup, then a piece of cake, then a bit of matcha cream. Complete until the cup is full then top with your whole strawberries.
