Strawberry Handpies

Just down the road from my house is the cutest farm run by the sweetest family you will ever meet. I have watched Mick Farms grow for the past few years and every time they expand or add something new my heart is filled with joy for them. They started with a sunflower field and a few vegetables and now they offer U-pick pumpkins, U-pick strawberries, farm grown fruits and vegetables, blessing boxes, and more. They also team up with local ranchers to offer fresh cuts of meat and small batch ice cream.

Strawberry days

Every December I start stalking the Mick Farms instagram page. I am anxiously awaiting for the first peak of strawberry season. That first post that shows one of their kids holding a handful of strawberries that inevitably has the caption “U-pick coming soon.” Then I become obsessive stalking the account until the glorious post that say “U-pick open!”

Driving out to their farm and being greeted by their children working the stands is always a joy. It is a little extra special when they hand over the black bucket and go over the rules for U-pick. Then it is off to the fields I go to find the most perfect strawberries to create recipes with. Once home, I wash them and set them out to dry. The window light highlights their perfection and I adore that in the right light, they almost look glittery.

Variations

If you are looking for something a little more simple, you can head out to Mick Farms and buy their strawberry jam to fill your pie dough with instead of making frosting and cutting strawberries. I created both when I made this recipe and both were fantastic.

Strawberry Handpies

Locally grown strawberries are featured in these easy to make handpies.
Prep Time 1 hour
Cook Time 15 minutes
Course Dessert
Servings 6

Equipment

  • 1 Baking sheet
  • 1 Cutting board
  • 1 Knife
  • 1 Cookie cutter or mason jar lid

Ingredients
  

  • 1 box Pie crust (should contain 2 sheets)
  • 1/2 lb strawberries sliced thin
  • 1/2 brick cream cheese
  • 1 tbsp vanilla extract
  • 2 cups powdered sugar

Instructions
 

  • Wash and dry your strawberries. Remove tops and thinly slice them.
  • Mix cream cheese, vanilla, and powdered sugar until you have a thick frosting.
  • Roll out pie crust and cut an even number of shapes.
    You can re-roll out leftover dough to continue cutting out shapes for hand pies.
  • On half of the pie crust cut outs, spread a dollop of frosting in the center. Don't pull it all the way to the edges so your pie crusts have somewhere to attach to.
  • Lay out strawberries on top of the frosting again trying to stay away from the edges.
  • Preheat oven according to the instructions on your pie crust box.
  • Take the other half of your cut-outs and place them over the strawberry halves. Seal the edges by pressing fork tines around the edge.
  • Place on a baking sheet and cook for 15 minutes. Check at that time and cook for an additional 3-5 if your pie crust is not flaky yet.
  • Once cooled, if you have additional frosting leftover you can top with frosting or eat them without.

Notes

Variation: skip the frosting and use pre-made jams in various flavors for a quick semi-homemade dessert.
