S’mores Brownies Recipe
With summer in full swing s’mores are inevitably on the menu. While I would like to imagine that summers in northern states bring the need for bonfires in the night to warm up, in Florida sometimes it’s just too hot to stomach going out even at night.
I spent my childhood years s’mores free. When I became an adult and cooked for myself I was still s’mores free because I was also bonfire free. Eventually, I started making oven s’mores with the broil feature and later moved up to grilled s’mores when we would pull out the grill. This started a weird obsession with everything s’mores that weren’t actually s’mores. You can find evidence of this here with my s’mores pops.
While not a huge brownie fan, these little jars are wonderful for a grab and go homemade sweet treat. Each jar contains granola, brownie, and marshmallow fluff that gives the vibes of summer s’mores without the mess. These are a decadent and gooey treat! While I used regular sized mason jars, I truly believe the smaller jars would work better for individual servings. I ended up eating these jars in 2-3 sessions because they are so rich.
Variations
No bake option – If you are looking at this thinking ‘Yes! But I don’t wanna bake because it’s too hot.” I got you. Entenmann’s brownie bites are a wonderful substitute for homemade brownies. If you love Cosmic Brownies, those might also work but I think the Little Bites are a closer consistency to homemade in comparison.
Jazz it up – Swap out the granola for crushed graham cracker for a more traditional brownie experience. Use Biscoff cookies, Teddy Grahams, or vanilla Oreos to change up the flavor.

S’mores Brownies
Ingredients
- 1 box Brownie mix (plus eggs +oil required)
- 1 jar Marshmallow Fluff
- 2 C Granola
Instructions
- Make your brownies per the box instructions and let cool.
- In a jar, bowl, or cup, place a scoop of granola.
- Place a layer of brownie then use a spoon to add marshmallow fluff. This can be difficult to get it off the spoon, I mostly tried to scrape it onto the sides of the container.
- Continue layering granola, brownie, marshmallow until jar is full.
