Chocolate Chip Cookies

Chocolate chip cookies are a staple cookie, like the icon of cookies. The only problem with that is that they aren’t all created equally. I have bought chocolate chip cookies from big box stores and also small bakeries that like nothing. Was there a hint of chocolate flavor? Yeah. Did they taste like childhood memories wrapped in a sweet treat? Not even close.

Last year I set out to make chocolate chip cookies that tasted like childhood and these are it for me. Will they taste like your childhood? I hope so, but no promises are being made. These cookies blend chocolate, butter, brown sugar, and salt in perfect ratios to give you cookies that taste undeniably like a chocolate chip cookie and not some sad sugar cookie that happens to have chocolate in them.

The key to this recipe is the salt. I know a lot of baking recipes explicitly call for unsalted butter but I am here to tell you that I have never once baked anything with unsalted butter because my desserts deserve the complexity that comes with balancing sweet and salty in a single dish. So, these cookies use salted butter. Very important. On top of that, they have a little more salt than your average chocolate chip cookie to give them a little extra something. If you are watching sodium intake or don’t like the sweet/salty vibes, reduce the salt. They still taste delicious.

My little garden is providing an abundance of jalapeños and tomatoes this year.
