S’mores Pops
Before the days of Pinterest worthy parties there was a mom who took all of her childhood dreams and turned them into realities for her child. One of those dreams was indoor camping. There was a pillow fort made from couch cushions and the sweetest little campfire made from paper, a strobe light, and tissue paper. Obviously, the only way to top this already amazing indoor camping session was to add s’mores. I was not a regular mom though so boring s’mores wasn’t it.
These s’mores pops have evolved over the years but the core concept remains the same, an uncooked marshmallow topped with chocolate and graham crackers. I have rotated through standard large marshmallows as well as s’mores marshmallows that are square. I prefer the square ones for chocolate to marshmallow ratio but the standard marshmallow for aesthetics. Do what you will with that information.

S’mores Pops
Equipment
- 12 popsicle sticks
- Parchment paper
- Cookie Sheet
Ingredients
- 12 Large marshmallows
- 1 sleeve graham crackers
- 12 oz chocolate chips
Instructions
- Place parchment paper on a cookie sheet to hold dipped marshmallows
- Put each marshmallow on a stick and set aside
- Melt chocolate chips using a double broiler or microwaving them in 30 second intervals, stirring between each interval
- Crush graham crackers and place on a flat surface such as a cookie sheet or plate
- Dip the marshmallows into the chocolate then immediately roll the chocolate part through the graham cracker crumbs. Place each marshmallow standing up on the parchment paper
- Place dipped marshmallows in the fridge to solidify chocolate before serving.
