Strawberry Matcha Parfaits
A whole year!!!! I made this recipe a year ago and then I got sick, then strawberry season ended, and I just held onto it. So here, a year later, is my recipe for strawberry matcha parfaits using locally grown strawberries from Mick Farms and matcha from The Trading Post Cafe. If you read a lot of my recipes, you will know that those are two of my favorite places to source inspiration from.
Since I made this a year ago, I have no idea what the inspiration was other than I really like tea, strawberries, and desserts. I opted for a quick and easy box mix instead of making the cake from scratch and bought whipped cream instead of making it. Could you make this completely from scratch? Absolutely. However, sometimes it is nice to just whip up a quick dessert without all the hassle.
U-Pick Strawberries
This time of year is my favorite because I can head out to Mick Farms and wander among their rows of strawberries searching for the perfect ones. I prefer smaller strawberries while my husband prefers the big chonky strawberries. I will grab a mix of both. If you have kids, this is a fun family activity just make sure you check in at the stand and follow all of their rules for their U-Pick fields.

Strawberry Matcha Parfait
Equipment
- Baking sheet with high edge
- Hand or stand mixer
- Piping bag (tip is helpful but not required)
- Circle cutter about the same size as your parfait cups
Ingredients
- 16 oz Whipped Cream
- 4 tbsp Matcha
- 12-16 Strawberries
- 1 box Vanilla Cake Mix (plus ingredients to make mix)
Instructions
- Prepare your boxed cake mix per instructions then bake on a baking sheet. Let cool.
- Mix your matcha into your whipped cream until fully combined. (You can do a taste test here to see if you want to add more matcha)
- Wash and slice about half of the strawberries. Cut the tops of the remaining half for the tops of the parfait.
- Add your whipped cream to a piping bag. Snip the tip. You want the hole to be a decent size but not massive.
- Using a cookie cutter or other round cutter, cut out circles from your cake.
- Layer your strawberries around the edge of the parfait cup, then a piece of cake, then a bit of matcha cream. Complete until the cup is full then top with your whole strawberries.
